Preparation
- Grill, boil, or roast corn kernels until tender. Let cool slightly.
- In a large bowl, combine cooked corn, jalapeño, garlic, onion, mayonnaise, crema, cotija cheese, cilantro, and lime juice. Stir to combine.
- Season with sea salt, Tajin, and epazote to taste.
- Serve immediately, garnished with additional cotija cheese, lime wedges, and Tajin.
