Preparation

  1. Grill, boil, or roast corn kernels until tender. Let cool slightly.
  2. In a large bowl, combine cooked corn, jalapeño, garlic, onion, mayonnaise, crema, cotija cheese, cilantro, and lime juice. Stir to combine.
  3. Season with sea salt, Tajin, and epazote to taste.
  4. Serve immediately, garnished with additional cotija cheese, lime wedges, and Tajin.
